• Material can under a phase transition from one state of matter (solid, liquid, gas) to another
• A phase transition either releases or requires a good deal of energy when it occurs: the latent heat
• One must carefully add up the heat required to raise a substance's temperature through a phase transition
• Air conditioners use a liquid-gas phase transition
